Day 3 of the 28 day challenge

Welcome everyone to Day 3!

First, I slept like a stone last night.  In bed at 930 pm and woke up at 630 am, sleeping through the night.   Sooo nice.  My conclusion: my body didn't have to work so hard to digest.  Our bodies were designed to consume plants, not animals.

I'd like to have a little anatomy lesson with Dr. Milton Mills on herbivores vs. carnivores.

1. “Start with the mouth: Carnivores’ mouths consist of a jaw with a simple hinge joint and relatively little musculature. They have short, pointed incisors, elongated canines for cutting and tearing flesh, and triangular, jagged-edged molars that work like serrated knives. Their saliva contains no digestive juices.
The saliva of herbivores, in comparison, is full of an enzyme called alpha-amylase that helps digest the complex carbohydrates found in plants. Carnivores don’t need this enzyme because meat doesn’t contain carbohydrates. Their mouths are made to cut and tear large hunks of flesh from the bone and then swallow it whole, without mastication.
Human mouths exhibit the same characteristics as those of herbivores. We have large, well-developed lips, and muscular jaws that can move side to side and back and forth to aid in biting off and mashing up plant matter. We also have spade-like incisors and square, flattened molars, better for grinding and chewing than chomping and sheering. Even our canines are comparatively blunt compared with the dagger-like teeth of carnivores.
And our saliva? Chock-full of alpha-amylase.

How about this......

“Heading down into a carnivore’s stomach, in the belly of the beast you find a large (compared to its body size) stomach, a bubbling cauldron of highly concentrated acid followed by a short, straight, and relatively simple intestine. The stomach needs to be large because meat eaters eat relatively infrequently, and when they do they need to be able to gorge themselves all at once, then digest later. The highly acidic stomach juices are necessary to dissolve the large quantity of muscle and bone materials that carnivores swallow, and to kill the bacteria in the rotting meat that could otherwise kill the animal. The intestines are designed to move food quickly out of the system so that it does not begin to putrefy.
The human stomach, again like that of other herbivores, is smaller and only moderately acidic because digesting fruits, vegetables, and grains is much less of a labor-intensive task. Our intestines are long and coiled, slowing the digestion process and allowing our bodies to break down foods slowly and to absorb more nutrients from them. Crucially, our large intestines have a pouched structure that is only seen elsewhere in the large intestines of herbivores.”

So just a couple thoughts.

On to today, I work up in Idaho Springs on Thursdays with Shawn. We have fun working together, and we do see a lot of the same patients.

I felt really good today, little coffee this am and here we go with the food...


Breakfast: wasa crackers with almond butter and sliced bananas
Lunch: Ezekiel bread, hummus, kale, cucumbers, mustard
Snack: 1/2 veggie sand from a deli. Guys at work ordered some and I was hungry!
Dinner: salad of spinach, kale, olives, radishes and sliced almonds. Tofu and broccoli stirfry, with a side of sautéed kale and mushrooms (sautéed in veggie broth to eliminate some oil)
Dessert: watermelon

I asked my 11 yr old stepson to rate dinner using a scale 0-10, 10 is the best.  I got an 8/10. SWEET.
I asked the husband, "baby, for what your trying to accomplish...10/10".   Not sure what that means but ill take it.
2 year old asked for more tofu and broccoli. And that my friends, made my evening.

Exercise:  Shawn and I are working on my perfect running set up, the right orthotic with the right shoe. So I ran up Virginia canyon road / oh my gawd rd in Idaho springs with 2 different pairs of shoes to get some answers.

For those of you who are not familiar with oh my gawd rd, say it again out loud and that's pretty much what the road looks like. And it kicked my a***.  And I kind of liked it:).

Tomorrow is Friday and the farmers market is Saturday in Golden, CO.
